When I was still working and commuting, I often skip breakfast. This mother was always in a rush preparing for work and taking care of the boys before sending them off to school. I guess, many parents are still in this kind of morning rush situation. That despite knowing breakfast is the most important meal of the day, they unintentionally skip it.

Champorado with Whole Rolled Oatmeal
Quick, simple and delicious, this Champorado with Whole Rolled Oatmeal recipe only requires four ingredients — MAYA Champorado Mix, whole rolled oatmeal, sugar, and water. A bowl of this flavorful champorado will surely warm your belly and keep it full until lunch time.
5 cups water
1/2 cup sugar
1 pack Maya Champorado Mix, 113.5 grams
1/2 cup whole rolled oatmeal
Boil water with sugar and 1 pack Maya Champorado Mix. Stir occasionally for 10 minutes or until rice is cooked. Add whole rolled oatmeal and continue cooking for another 2 to 3 minutes. Add more water if the champorado is too thick. Serve with milk as desired.
Yield: 4 to 5 servings
Even picky eaters who don’t like fruits might change their mind with the Healthy Breakfast Hotcakes with Fresh Fruits. This dish is so easy to make that you can even get the kids to join in. Prep the batter and pour it into a lightly greased pan or flat skillet. Just wait for the top to turn bubbly, then flip over. Finish by topping with fresh fruit and maple syrup or honey.
1 piece medium-sized egg
2 tablespoons oil
3/4 cup water
1 pack Maya Original Hotcake Mix, 250 grams
assorted fruits for toppings
Yield: 8 to 10 hotcakes
Pastrami Eggs Benedict
Serve a hearty Beef Pastrami Benedict in less than 30 minutes. Take a piece of ciabatta bread and pile slices of pastrami, tomatoes and arugula leaves. Place one poached egg on top, then drizzle with hollandaise sauce. You can make your hollandaise at home to use for a variety of meals. Here’s how: Beat egg yolks in a pot of simmering water, remove the bowl from heat, and then pour butter lemon juice, salt and white pepper. Continue mixing until it smoothens, and you’ve got the sauce ready to go.
3 – 4 pieces ciabatta bread
Olive oil, as needed
8 slices pastrami
1 piece egg, poached
sliced cherry tomatoes, as needed
arugula leaves, as needed
3 pieces poached egg or soft cooked egg
prepared hollandaise sauce
Lay a piece of ciabatta bread on to a plate. Drizzle olive oil on bread. Arrange slices of pastrami, tomatoes and arugula leaves on top of a slice of ciabatta, place 1 poached egg on top then drizzle with prepared hollandaise sauce.
1/2 cup clarified butter
2 egg yolks
1 1/2 teaspoons water
1 1/2 teaspoons lemon juice
salt and white pepper to taste
6 pieces poached egg
Put the egg yolks and water in a bowl placed over a pot of simmering water. The bottom of the bowl must not touch the simmering water. Beat vigorously with a whisk until lemony in color. Remove pot from the heat then slowly pour in the clarified butter while beating continuously and vigorously, until emulsified. Add salt, pepper and lemon juice. Set aside.
