I recently met a dear friend. She has been living alone for quite some time. She is renting a small apartment near her workplace to save on time and gas expense. Her home where her parents are also staying is quite far from her office address.
In one of our conversations, we made a pact that we will save again for our travel. Well, we used to travel together years ago when I still don’t have our Little Man and SumoSam. And to help her save, this mother mentioned she needs to cook her own meals.
Cooking for one
I shared with her a few recipes she would certainly enjoying preparing. These recipes make serving sizes perfect for just one. Now, she can avoid wasting leftovers. She can also watch her health knowing what ingredients go in what she eats. With these, she can surely save money plus watch her health, too.
She can start her day right with a quick and delicious breakfast she can make herself. It is also easy to clean up after.
Breakfast Bacon Rashers in Potato and Vegetable Hash
Just sauté onions and garlic in a skillet, then add in regular potatoes, sweet potatoes, and carrots. When the vegetables are cooked, top them with a fried egg and crispy bacon. And there she’ll have a nice and hot breakfast that will save her from too much fast food in the morning.
Crepe Cheesy Jalapeno Ala Quesadilla
For lunch, she can have Crepe Cheesy Jalapeno Ala Quesadilla.
Making her own crepe is very easy using the MAYA Original ‘Fluffy n’ Tasty’ Hotcake Mix and MAYA Cornstarch. For the filling, get some mild cheddar, mozzarella, and quick melting cheese. Add taco seasoning powder, jalapenos, red and green bell peppers, and onions. Place all the ingredients in a bowl and keep it in the refrigerator until she’s ready to assemble her cheesy quesadilla.
Chicken Gyro Brown Rice Bowl
Another dish she can prepare the night before is the Chicken Gyro Brown Rice Bowls. Marinade chicken breast fillets in a bowl with salt and pepper, minced garlic, and a couple of herbs like basil, thyme, oregano, rosemary, and cumin. Keep the marinated chicken breasts in the fridge until she’s ready to grill them the next day. When she gets home from work, just grill the chicken in a griddle pan with some olive oil. Grab a single serving bowl, scoop in hot cooked brown rice, and place her grilled chicken slices on top with a drizzling of her favorite Greek yogurt sauce. Now, that makes a comforting and healthy rice bowl for dinner.
