Last month, I went back to working away from home. My mother set up an office for her business, and she got me as her Accounts Support.
Our weekdays become busier, giving us the reason to have a more relaxed weekend. Our Saturdays now are quite comfortable as we tend to spend more time in bed. Perhaps, that’s the best part of the weekend – waking up on a Saturday morning at our liking.
Most likely, it’s already past breakfast that we stretch our arms and leave the bed. As it’s too late to prepare for breakfast and too early to eat lunch, we often have our brunch instead, the lovechild of breakfast and lunch.
Usually starting at 10 am and stretching until 2 pm, brunch often creates a more relaxed dining atmosphere. We need not hurry to get to work, giving us more time to hang out and catch up with the family. Even the boys can help in the kitchen, giving us again, an added family bonding time.
Last Saturday, I joined The Maya Kitchen‘s Brunching in with Chef Noel dela Rama. Chef Noel is a New York-based caterer, culinary instructor, and personal chef. He has also catered to Manila’s most prominent names at private dinners. His culinary experience, especially in New York where many are into brunch, makes him the perfect coach for the workshop.
Chef Noel proved that creating an appetizing brunch spread especially when entertaining at home is not an impossible task. He purposely chose to teach easy and accessible dishes like Chorizo Breakfast Casserole, Eggs baked in Ham Cups, and Banana Bread Coffee Cake with Streusel Topping.
We love the Eggs in Ham Cups that the following morning, we prepared a few cups for the boys to try. They readily enjoyed them and even thought they were too complicated to make. But honestly, it only took me about less than 30 minutes to prepare and cook everything. It was that simple!
By next Saturday, we will try Chef Noel’s Banana Bread with Streusel Topping. And this mother is positive that her boys will love the bread just like how they enjoyed the Eggs in Ham Cups.

I tried to make this recipe and I found it tasty and easy not only for breakfast but also as an accompaniment to dinner!

I would love for my kids to let me sleep in on the weekend! Because we are so rushed during the week, weekends are when we get to sit down and have a nice family breakfast. The ham and egg cups look delicious and the short time to prepare means we can have some family breakfast time during the week as well!
I love easy breakfast recipes. I’ve tried a similar recipe, and will be giving this a try. These are also great for a to go breakfast.
These look so pretty and easy to make. I am vegetarian so I would not be able to do the ham. There is a vegan ham alternative in the health food shop. I may try this recipe using that even though I dislike eggs a lot.
