The fun side of having a big family is that you somehow master how to make ends meet.  We have shared one of our petsa de Peligro dishes last October.  Now, we would like to share with you again another dish I often serve to my boys.

Perhaps every homemaker could relate how stressful it can be to think of `what to serve for the next breakfast, lunch or dinner.  This holds true especially when you have picky eaters and they just hate it when you repeat viands.  The same stress when you just don’t feel working in the kitchen and yet you need to produce food for your school kids.

Well, Lumpiang Shanghai has saved me a lot in many emergency situations.

Once a week, I make it a point to make as many raw rolls in advance.  I will just keep them in the chiller and fry a few pieces when I can’t think of anything to cook.  There is no need to thaw the lumpia.  I can deep-fry it right away.  That what makes it such a hassle-free food to prepare.

Lumpiang Shanghai or commonly called spring roll, remains to be one of my boys’ all-time favorite Filipino dish.  I often use ground pork but sometimes, I also use chicken and beef.  Shrimp is also a nice alternative to pork or may be added completely to give the dish an additional flavor.  And just recently, I tried one of the highly recommended oily fish for a healthy diet.  We need to support husband’s quest for a healthier him.   For our spring rolls, we used mackerel.

I have read that the flesh of mackerel spoils quickly and can cause food poisoning.  So for our Mackerel spring rolls, I just prepared and cooked enough for lunch.  And should they ask for more,  I can always prepare again as Lumpiang Shanghai is one of the easiest to prepare and cook.

Mackerel Spring Rolls Ingredients

  • 2 big cans Unipak Mackerel
  • ½ cup green onions (finely chopped)
  • 1 cup carrots (finely chopped)
  • 1 cup singkamas (finely chopped, optional)
  • 1 cup onion (finely chopped)
  • 2 teaspoons garlic powder
  • 2 eggs
  • salt and pepper to taste
  • 50 pieces Spring roll wrapper
  • 1 cup cooking oil

Mackerel Spring Rolls Cooking Instruction

  1. Heat pan.  Saute onion.  Add all the ingredients:   carrots, singkamas, green onions, garlic powder, and two pieces of raw egg.   Drain mackerel and include in the pan.  Add salt and pepper according to taste. Mix well and crash mackerel to tiny pieces.
  2. Let it cool for a few minutes.  Prepare the lumpia wrapper
  3. Place about 1 to 1 ½ tablespoons of mackerel mixture in a lumpia wrapper and fold carefully.
  4. Turn on the heat and pour the cooking oil in a small saucepan.  Set heat to low or medium level and deep-fry the lumpia for seven to ten minutes.
  5. Take out the lumpia from the deep-fryer and place in a strainer to let the excess oil drip.  You may also use a kitchen paper towel.
  6. Transfer to a serving plate.
  7. Share and enjoy!

    2 big can ng MACKEREL
    2 pcs carrots (chopped)
    1 taling malunggay

    All purpose flour
    1 chopped onion
    1 chopped garlic
    Salt and pepper to taste
    Cooking oil( for frying)
    * drain unipak mackerel,and then mix all of the ingredients except cooking oil ..
    Heat the pan ilagay ang cooking oil at sawakas ready na tayong mg fry
    Pag tapos mg fry (pagluto na)
    Rrady to eat na
    hinahaluan ko siya ng gulay gaya ng carrots and malunggay para healthy at hindi napapansin ni daughter na my gulay kaya ang dami niyang nakakaen easy to make na healthy pa

    These spring rolls look delicious.Nice to know about Lampiang Shanghai and the preparation method.In Sri Lanka,we also cook something similar with mackerel filing.We call it as ‘Chinese rolls’.Spring rolls are good for anytime when there is a need for a quick snack 🙂

    V and Z’s favorite ang lumpia!

    My go-to dish for emergency situation is mackerel sisig. You just need 4 ingredients: mackerel, soy sauce, mayonnaise, onion, and egg (optional).

    My favorite emergency dish, aside from omelette and miswa, this is all also my son’s favorite, mackerel nuggets. Combined mackerel, onion, carrots, salt, pepper, flour, egg and breadcrumbs (sometimes I used cracker). Then deep fry.

    Our family’s go-to-dish in times of emergency is Sizzling Uni-Pak with Peppered Tofu Cubes.

    It really saves our meal and it tastes and feels like we are eating best dish ever! Uni-Pak is very healthy and Tofu too, it is very affordable that is why it is our favorite dish especially when it is “Petsa-de-peligro”.

    With Uni-Pak, our health is not compromised. We are still getting best nutrients in this simple dish turned special because Uni-Pak is yummy and tasty. We love it and always wanting more.

    My family’s go-to-dish in times of emergency is the Uni-pak Miswa Soup with Patola, and Malunggay.

    This dish really saves us in times of emergency as we always have a stash of Uni-Pak and miswa, we have a malunggay tree in our backyard so we will just get it from there and will just buy the Patola (if not available then potato or sayote will do) then we are good to go. We can eat hot soup which is very yummy and healthy. My family loves this dish so much and always requesting to have this more often.

    We love eating Mackerel. I didn’t know though that it can be transformed into lumpia. I love lumpia and my family loves. I guess I will be experimenting this dish too. Too sad I wasn’t able to join.

    My husband loves spring rolls and I ground pork for spring rolls is always on the list when we do our weekly grocery. Tried tuna but never tried mackarel yet! This is a good idea to put another variety of what we are alreadu used to! Good thing you added what time of mackarel, now I know what to find! 😀
